Happy weekend, friends!
This morning started off strong with pancakes for breakfast—Addi even helped make them! She’s my favorite little helper and, big news, she went potty in the potty today!
I managed to squeeze in a short workout before diving into dinner prep. I’m so excited about tonight’s meal: a pot pie with a sourdough crust! I’m trying something a bit different this time. First, I dredged the chicken chunks in seasoned flour and fried them up. Then, I removed the chicken, sautéed the mirepoix, added the chicken back in, and poured in some broth to bring it all together before making the crust.
Speaking of sustainability, I’ve started saving all my vegetable scraps in a gallon freezer bag to make homemade broth. It’s a small step, but I’m hoping it’ll help me be more sustainable this year.
