Hi guys! I’m baking today—mini pavlovas and cheese danishes for tomorrow, which is the first day back at ECFE! I’m so stoked. Right now, I’m also enjoying some lunch: leftover big ass salad and cucumber salad. It’s so delicious, and I’m genuinely feeling proud of myself this year.
Back to baking—pavlovas are in the oven now! I used almond and vanilla extract, and tomorrow I’ll whip up some cream to go with them. I’m also bringing toppings like banana slices, strawberry slices, toasted coconut, maple cream, and chocolate chips for people to choose from. I’m also making mini cheese danishes! Oh, and I found non-alcoholic Kahlua coffee creamer, which I’m pretty excited about.
Addison is napping, and when she wakes up, I’ll probably be done baking, but she’s going to help me make dinner—nice cottage pie!
I’m also still going strong with my goals for the year. I’ve been working out every day wven if just for a few minutes, and I’m still doing dry January! I'm also keeping up with this blog! My hope is that I can learn to be more understanding and patient in my skin, and maybe I can confidently wear my sexy little black dress for next New Year! Anyway, if you are reading this thank you!
