Hello! Today is Saturday—Happy Saturday! Yesterday, I turned thirty!
My day started with a beautiful bouquet of roses, and Addi and I went out for breakfast. After we ate, we drove to Virginia (the city) to pick up her dad from work. We made a few stops at Target and Walmart, then headed home, where Kurt grilled steaks and crispy potatoes. I made crab legs and corn on the cob to go with it.
Two of my friends dropped off gifts, and Kurt surprised me with a gorgeous new slow cooker—the floral one from Drew Barrymore’s collection! I couldn’t wait to use it, so today we’re making potato soup for dinner.
Here’s my easy and delicious slow cooker potato soup recipe:
Ingredients:
1 tbsp butter
1 tbsp bacon grease
4 cups chicken broth
4 russet potatoes
1 medium yellow onion, diced
1 cup heavy cream
Your favorite seasonings (I keep it flexible!)
As much sour cream as you like
A generous handful of shredded cheddar cheese
Instructions:
1. Add the bacon grease and butter to your slow cooker.
2. Toss in the diced onion and chopped potatoes, then pour in the chicken broth.
3. Cook on low for about 5 hours.
4. Once the potatoes are tender, mash them right in the slow cooker to your desired consistency.
5. Stir in the heavy cream, seasonings, sour cream, and shredded cheddar cheese.
6. Give it all a good mix, and you’ve got a comforting bowl of potato soup!
Tada—soup is served! It’s the perfect cozy dinner for a Saturday.
